A Euthanatos cop stalks the streets, bending the rules with a little use of Entropy to even the odds. Its just "good luck", "coincidence" and "fate". Remember that the Euthanatos aren't all about the Good Death either. Sure, unrepentant murderers, rapists, pedophiles, drug pushers and gang members might deserve the Good Death. But what about the victims? What about people who turn to crime because they don't see any other way out? A Euthanatos cop is about making things right, helping the victims, and making sure that those who commit crimes see the error of their ways and reform. The Good Death is only for extremes.
Also, if you like stereotypes the Aided can be interesting for your stereotypical Irish-American cop. Seriously though, groups like the Chakravanti (for South Asians), Pallottinos (for Italians), Madzimbabwe (for Caribbeans and African-Americans) and other ethnic factions make for interesting law enforcement types who have ties with the locals.
As for the other Trads, most of them are possible for cops, though unlikely or highly specialized.
* Akashic Brotherhood - Do certainly can help with enforcing the law, and it could easily pass as a mundane martial art to those unfamiliar with it. And the Akashic Brotherhood is very big on morality and upholding Dharma. Due to geography and culture, the Akashics are going to be most common in East Asia (or Chinatowns and Little Saigons here in the west). Think along the lines of an ass-kicking Hong Kong action hero... Jackie Chan and such.
* Celestial Chorus - Actually I think the Chorus would be a pretty good choice too. Think about it, the Chorus is all about protecting humanity, upholding order, etc. A Chorister cop will probably come from one of the knightly orders (Knights of St. George, Sisters of Gabrielle, Order of the Firebird, Sons of Mithras, Templars, etc) and will focus mostly on protection and "doing the right thing".... protecing mortals from both mundane and supernatural threats. They don't need to be Christian either... Muslim, Jewish and Mithraic Singers work too.
* Cult of Ecstasy - One of the more difficult ones, because their Paradigm is all about breaking down barriers. Drugs, sex, and the like are more likely to get them in trouble. The most likely type would be something like the Children's Crusade faction, helping victims of rape, pedophilia or child abuse. Ever watch Law & Order: SVU?
* Dreamspeakers - Dreamspeakers can fit in just about anywhere, once you figure out how they talk to spirits. After all, most spirits have bigger things on their mind than "good" or "evil". So a Dreamspeaker cop is possible, especially if he follows a Totem that stands for order. Perhaps he has insight into people's thoughts and actions, or discreet warnings from the spirits. I think the coolest (and easiest) route to go with is to have a Reservation cop, born and raised with the "old ways". Read the novels by Tony Hillerman for insight (or watch the PBS adaptation of Skinwalkers).
* Order of Hermes - Another likely one. The Hermetics have influence in politics, law and the like. While usually more academic, a Hermetic cop is likely, especially in Houses like Quaesitor or Tytalus. A Hermetic cop has to be careful, since relying on high ritual magic makes you seem.... well weird, possibly a little unstable. Subtle things like an interest in Tarot cards or carrying "lucky charms" you can get away with. Even Latin might seem like a Catholic prayer to outsiders. Chanting in Enochian and pointing a wand at a perp, on the other hand, is straight out. A Hermetic cop is going to be brave, ruthless and head strong. You could possibly do a "police psychic" here too.
* Sons of Ether - Actually another good choice. The Adventurer faction is all about helping people through science and their inventions. An Adventurer would make a decent street cop. Sure, he'd have to be careful to make sure not to use his inventions while on the job (or at least, if he does, make sure they are subtle so they don't get noticed; like a REAL bullet proof vest or maybe an implant that gives him greater than average strength). An Adventurer is going to be more of a rugged idealist, one who lives and dies based on his principles. Psychic powers are also worth considering here.
* Verbena - Oh God, more stereotypical Irish-American street cops. Okay, seriously, nothing precludes a Verbena police officer, though their focus on the bloody, primal ways of nature makes them unlikely. If a Verbena were to gravitate towards police duty, he'd probably be concerned mostly with his community. His magic would be subtle, mostly personal faith and would go unnoticed (yeah, hes a Wiccan or Neo-Pagan, so what?). Your typical Verbena is going to be a rural, small town cop, one who knows (and is probably related to) everyone in his town.
* Virtual Adepts - Another difficulty one, because the Virtual Adepts have their interest in anarchy and social reform. An Adept cop is going to run into alot of trouble because of his political views. Still, they do have a sense of right and wrong and are dedicated to social reform. An Adept is most likely to gravitate towards jobs where he uses a computer or monitors criminals. On the street, your typical Adept is pretty much just another mortal. Still, they are amongst the best at gathering information and social engineering.
* Hollow Ones - Yeah right... Same goes for most of the Crafts.
HOWEVER the largest number of police are going to go towards the Technocracy. The Technocracy's ideals are all about protecting humanity, upholding the current social order, and so forth. Most police are going to gravitate towards the Technocracy simply as a matter of fact.
The New World Order is the biggest one. Sure, the stereotype is for spies, government agents and men-in-black, but thats not the only possibilty. Remember that you've also got psychologists, reporters and academics there too. Police fit right in with the NWO's ideals of upholding order and status quo. It might not be as glamorous as covering up aliens, writing government policy or shaping public opinion on the news, but its essential to the agenda. NWO cops are going to be by the book, upholding the law with a cold passion and making sure that the crimianals get punished... LEGALLY!
As for the other conventions, the Void Engineers aren't all that concerned with things in or around human settlement. They're explorers, more interested in deep space, the oceans, rainforests, time travel, virtual reality and other distant places. The Syndicate is more concerned with making money, and unfortunately has ties with organized crime, drug cartels, corrupt businesses and other unsavoury practices. While not every Syndicate mage is a criminal (or connected to them), the Convention as a whole doesn't get along with with law enforcement.
The Progenitors are more concerned with biological research, and even have some ties to drug groups (mainly as test subjects). However, genetically enhanced humans from the Convention certainly would make good cops. Stronger, faster, healthier and even smarter than normal humans, they are perfect street cops. The Convention likely holds some great forensics experts as well.
Similarly, Iteration X probably has numerous enhanced agents working as cops. With cybernetic implants, they can make their field agents stronger and smarter than a typical human. This makes them enforcers and investigators of the highest caliber. They also have access to cutting edge equipment for investigating crimes or monitoring criminals, and some of the most powerful weapons out there. Bye-bye reality deviants.
