A Carnival LARP Some advice?

I'm running a Carnival LARP game at the end of the month. This is going to be the first heavy social game after two months of war. It's a celebration of the PC's victory and it should be a fun time.
However I'm coming up short on good ideas for activities during the celebration. Jousts are normally popular but don't fit the feel of Carnival. Other than the local ruler becoming the jester and a drunken mortal becoming king for the night, I can't think of much to do for the game.
Does anyone have any good ideas for in-character events for this game, stuff like contests, games and entertainment to keep the characters (and players) interested?

The game will be heald here in Melbourne FL at a local university.
I know what happens at Carnival. Maybe I was a bit unclear in my first post, I'm kind groggy currently from allergies.
But anyway, this game will have no real new plot. It's a break for me and my players who have been busy fighting for their character's lives over the past 4 months of games. However I want there to be more than 6 hours of people standing around talking in character. Most big Chnageling parties have events planned such as jousts, bazaars, contests and random games but the more formal ones (like jousts) don't work for the drunken party atmosphere of Carnival.
I was wondering if anyone had any ideas for what to do.

well i would think the carnaval itself would cause enough insanity without game seeing as how everybody get to pick on the jester (the normal ruler) the kind is a drunken mortal and if anyone is bad the drunken mortal decided there punishment.
maybe some drinking games? i dont know

It's on campus, but for the most part doing strange things are OK if not expected. LARPs have been held at this location almo0st weekly for the last 9 years.
Space we have 2 interior classrooms and a large outside area abou the size of a football field.
Resources not so much, and excessive set decoration is pretty much out considering we have little time to set up and tear down.

I'm just trying to think of ideas.
Some people sellings wares is definatly a good idea (and a good source of things to have happen). You might want to see if any of your NPCs/players have singing/dancing/something like that talent, and have them show it off in character.
See if you can get a hold of some portable stereos. I think appropriate background music would be a good idea.
Beyond that, find some games that were actualy played in occasions like this over the years, you might get some ideas that way as well.
